Skinny Chocolate Fudge Banana Muffins


In yet another attempt to make some healthy breakfast goods for the boys I tried out these Skinny Chocolate Fudge Banana Muffins that I found over at Sally's Baking Addiction.  After the last couple of muffin recipes I've made I know that I can't sneak bananas into Hasan's muffins. He knows...and he doesn't like it.  But I have to say these muffins were very good.  Hasan had one and really enjoyed it.  Then he noticed there were some white flecks in it and once he knew it was banana he was done.


Now that Bilal is no longer taking naps and he isn't watching TV in the weekdays he is always around when I'm taking pictures.  While taking pictures he kept reaching to grab a muffin so I thought I would get him to hold the muffin for me. He did a great job and was very still.  Once he was done he then wanted to hold everything else :).

Skinny Chocolate Banana Muffins
Adapted from Sally's Baking Addiction

3 large, very ripe bananas
1/2 cup coconut sugar
1/4 cup sugar
1 egg
1/3 cup unsweetened applesauce
1/2 cup whole-wheat flour
1/2 cup all-purpose flour
1/2 cup cocoa powder
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
1/2 cup chocolate chips (I used PC Decadent Semi-Sweet Chocolate Chips)

Preheat 375 F.  Grease muffin tin or line with paper liners.

In a large bowl, mash bananas until no lumps remain.  Stir in sugars, egg and applesauce.  Sift the flours, cocoa powder, salt, baking powder and baking soda into the wet ingredients.  Stir until just combined being careful not to overmix.  Fold in the chocolate chips.  Divide dough among the 12 muffin cups (I got around 10 muffins).  Bake for 18-20 minutes or until a toothpick inserted in the centre comes out clean.  Let cool for 3 minutes and then transfer muffins to a wire rack to cool.  Store in an airtight container.

    And I love that mashAllah Bilal is enjoying it when you take pictures. These are the pictures we're going to look back at and they're going to make us smile :)

  2. so sweet of ur lil one... :) my younger one also keeps snatching from the food that i arrange to take photographs, they are just so curious... the muffins just looks so good... chocolaty goodness...

  4. First thought it was you holding the muffins.When i read its your son holding it ,so sweet :). Healthy breakfast is always my preference .hmm so good.By the way what do u mean by coconut sugar ?

  5. My husband is like your son, once he discovers I have sneaked in some banana to make a bake healthy he refuses to eat it! These muffins look great!
