Pasta with Roasted Red Pepper Sauce

I am really enjoying all these pasta dishes from The Pioneer Woman.  I always thought making pasta sauces from scratch would be so time consuming but I was wrong.  This is a really easy pasta to make.  I liked it like this but next time I think i'm going to try to make it spicy.  It came together very quickly.  The original recipe said to roast your own peppers but I don't have that kind of time so I bought a couple of jars of roasted peppers.  I substituted low fat sour cream for the heavy cream.  This would taste even better with the heavy cream but I'll pass on all that fat.  My mom had this pasta.  She really liked it and she isn't a big fan of pasta.


Pasta with Roasted Red Pepper Sauce

3 roasted red peppers
2 tbsp pine nuts (optional)
2 tbsp olive oil
2 cloves garlic, minced
1/2 medium onion, finely diced
1/2 cup sour cream
Flat leaf parsley, minced
Parmesan cheese
1 pound pasta (I used Orecchiette)
salt and freshly ground black pepper

Cook pasta according to package directions.

Lightly toast pine nuts in a skillet and set aside.


Puree peppers and pine nuts.


Heat pot over medium heat.  Add oil.  Add onions and garlic and cook until soft.  Add pepper puree and season with plenty of salt. Stir.  Pour in sour cream and freshly ground black pepper.  Stir.  Taste and adjust seasoning accordingly.  Add cooked pasta and combine.  When serving garnish with parsley and Parmesan cheese.

  7. Salams, What brand parmasean cheese do you use? Every brand that I have checked has rennet or lipase.

    Grande Parmesan Cheese has no animal derived ingredients. You can find it at CostCo and I've seen it at WalMart.

    This week I found a KRAFT 100% Parmesan Grated Cheese at WalMart that did not have any rennet or lipase. I have not been able to find the cheese I bought on their website though. It is NOT the usual one you find in the green container. It was a thin small cylinder in the same aisle.

    I hope this helps. Lately I haven't been using Parmesan to cut back on the fat.
