Buttermilk Chocolate Chip Muffins
My new favourite ingredient to bake with is buttermilk! I've been replacing milk with buttermilk for my muffin recipes lately and the result is an even more moist and delicious muffin. This recipe is update from my Whole Wheat Chocolate Chip Muffin recipe. I usually use a mix of different chocolate chips that I have on hand. In the picture above, I've used mini semi-sweet chocolate chips.
Whole Wheat Apple Muffins
Fall is here and that means the best apples are available! Every year, we go apple picking but this year we haven't had a chance to go yet. Hoping to go soon before the season is over. Whenever we do go, we come back with way too many apples and one of my favourite things to do with apples is to bake with them! The muffin recipe I am sharing with you today is our favourite Apple Muffin recipe. My eldest son loves them for breakfast. These are choke full of apples and a lot of cinnamon flavour! I've made a couple of changes to the original recipe. Mainly to replace the butter with oil and change the topping to raw sugar rather than brown sugar. I hope you give them a try soon!
Healthy Whole Wheat Butterscotch Carrot Muffins
Where has the time gone? Ramadan is already half over! I hope we are all doing our best to make the most of this blessed month. With the end of Ramadan approaching it also mean Eid Eats is coming up. I had told you all about Eid Eats in my post for Chicken Kheema. Eid Eats is a virtual potluck where we all "bring" a dish we would serve on Eid. I hope you will join in with us. Whole Wheat Chocolate Chip Muffins
Just about every week I am baking muffins for my eldest son's breakfast. He loves to have baked goods for breakfast while my youngest is an oatmeal fan. These Whole Wheat Chocolate Chip Muffins are one of his favourites. I make them half with white whole wheat flour to make them more filling and healthy. In Canada, you can find white whole wheat flour at Bulk Barn. I find it's lighter than regular whole wheat and isn't as dry. I have used some coconut sugar in this recipe. If you don't have any, you can substitute regular sugar.
Blueberry Bran Muffins
I recently found myself in the possession of a few boxes of Kellogg's All-Bran cereal. After tasting the cereal, no one was a fan or willing to eat anymore. So I started googling how to use the cereal in other ways. I came across a recipe for Bran Muffins from King Arthur Flour. Their recipe uses raisins. I am not a fan of raisins in baked goods so I decided to use some blueberries. They turned out excellent! They were moist and light. It won't be too difficult to use up all the bran cereal we have now! Do you have any creative ways to use up All-Bran cereal? Please share in the comments below.
Whole Wheat Apple Muffins with Oat Cinnamon Streusel #GayLeaMom {Giveaway}
My eldest son loves to have muffins for breakfast and I love to try different muffins to bake. I find a lot of muffin recipes really are just cake. They are made with all-purpose flour and have lots of sugar. When making muffins I try to make them healthier by using whole wheat flour and reducing the sugar. So my muffins are slightly sweet and more wholesome. For these muffins I topped them with an Oat Cinnamon Streusel that I made with Gay Lea Cinnamon & Brown Sugar Spreadables.
Healthy Gingerbread Muffins
In my last post, I shared with you my review of Grace Kennedy's line of coconut products. I used the organic coconut oil to make these Healthy Gingerbread Muffins. I like to bake muffins for Hasan's breakfast but I wasn't sure if these were going to fly with him since there was no chocolate. I took them for an after school snack when I went to pick the boys up from school and they loved them. I'm glad that they are moving away from wanting everything to have chocolate in it.
Low Fat Chocolate Chip Oatmeal Cookies
I'm always on the search for a low fat cookie recipe. My boys love cookies and it really is hard for them to stop at one. I came across this recipe on Skinnytaste. I liked that they were oatmeal cookies and I find that if I put chocolate chips in anything, the boys will gobble them up!

Skinny Chocolate Fudge Banana Muffins
In yet another attempt to make some healthy breakfast goods for the boys I tried out these Skinny Chocolate Fudge Banana Muffins that I found over at Sally's Baking Addiction. After the last couple of muffin recipes I've made I know that I can't sneak bananas into Hasan's muffins. He knows...and he doesn't like it. But I have to say these muffins were very good. Hasan had one and really enjoyed it. Then he noticed there were some white flecks in it and once he knew it was banana he was done.
100% Whole Wheat Banana Muffins
Trying to stick with baking some breakfast goodies for the boys to help our mornings go smoother, I tried out these Whole Wheat Banana Muffins I saw on Joy of Baking. I made half the recipe which gave me 6 muffins. Since these are 100% whole wheat flour the banana flavour is more muted. To get the boys excited about them I sprinkled some with some chocolate chips. The first time I made these Hasan loved them. The second time I didn't mash the banana as well and he wasn't happy with mushy parts in his muffins. So next time I will be sure to thoroughly mash the bananas so he has no clue that it's in there.

Kiwi, Coconut and Lime Muffins
I saw these muffins awhile ago at An Edible Mosaic. I wasn't sure about the flavour combination but I absolutely loved Faith's pictures so I had pinned it right away. Everything I have tried over at An Edible Mosaic has turned out fantastic. Most recently I had made Saffron Rice with Golden Raisins and Pine Nuts.
August Morning Muffins {SRC}
It's time for Secret Recipe Club once again! This month I was assigned The Gingered Whisk written by Jenni. I love how the food she writes about is the food they actually eat..which is what I also do!! Jenni also loves to read and even has a list of her favorite books! Every since I had Bilal I haven't read a single book...seeing Jenni's list really has me thinking I need to make some time to get back into reading.
Oatmeal Date Muffins
Seven years ago my husband and I went to PEI. We stayed in the cutest inn called The Great George. I can't remember if it was everyday or just on weekends, but they would serve complimentary breakfast in the lobby. They would also have coffee, tea and treats in the lobby 24 hours a day. You could buy the recipes for all these tasty treats in the lobby. We enjoyed everything so much that I bought a recipe book. This recipe book had a recipe which we didn't have at the Inn. It was for these muffins. I made a few tweaks to the recipe to suit our tastes. This is a mildly sweet muffin that is perfect for breakfast. It is sweetened with honey and dates. I had made these this past Ramadan to have during Sehri (our meal prior to the sun rising). I added some flaxseed to bump up the fiber in them and mixed in a little whole wheat flour.
Chocolate Chip Muffins
This is a recipe I adapted from one I found at AllRecipes.com. The original recipe is for blueberry muffins. I've used this recipe with blueberries and it turned out well but I think it could use a crumb topping or sprinkle of turbinado sugar on top. As chocolate chip muffins they were good as is. If you like them really chocolatey you could add more chocolate chips.
