Hazelnut Butter Chocolate Chip Cookies & Eid Eats 2018
I can't believe Ramadan will be here in one month! Time goes by so quickly! This also means that it's time to announce the fifth edition of Eid Eats! To start things off, today I'm sharing some delicious Hazelnut Butter Chocolate Chip Cookies that are some of the best cookies I've ever had! The recipe for these cookies are from Henna's blog. She originally made them with Almond Butter. I had Hazelnut Butter in the fridge and was thinking maybe they may have a Nutella flavour to them. They didn't quite taste like Nutella but they were amazing! I made half the recipe below and they were gone in no time! My boys couldn't stop raving about them. You could use whatever nut butter you have on hand for these and I'm sure they would turn out great!
Frosted Sugar Cookie Bars
I've been wanting to make Frosted Sugar Cookies for a while now. I love the idea of spreading a cookie batter in a pan and baking. Less time consuming than having to keep putting new batches of cookies in the oven. I've never been very good at making cookies. I make them too big or they come out flat. I love the idea of cookie bars! I find my boys are much more into cookies than cake and they loved these!

Almond Biscotti
Recently I shared with you a recipe for Maple Walnut Biscotti which my husband and I really enjoyed. That version was along the lines of a traditional Italian biscotti, very hard and crunchy. Today I'm sharing a recipe for Almond Biscotti which is typical of a North American biscotti. It isn't as hard due to the addition of butter. This version of biscotti was a big hit with everyone at home. The second time I put them in the oven, they darkened a little too much but were still delicious! My boys really enjoyed having them for an after-school snack.

Today is the day for The Secret Recipe Club. This month I was assigned Bewitching Kitchen written by Sally. Sally was born and raised in Brazil. She currently resides in Manhattan. She goes by Julia Child's advice "Everything in moderation, including moderation". She loves to exercise, jog and play golf. I really liked how at the end of every post, Sally gives her honest opinion about how she felt about the recipe. She has a huge collection of recipes on her blog. So big that narrowing it down to one recipe was hard. Her recipe collection includes a number of Brazilian recipes that I hope to try soon. While I was browsing Sally's blog, my husband mentioned if I could make biscotti so away I went to search on Sally's blog. I came across her recipe for Maple Walnut Biscotti.

Soft Baked Pumpkin Cookies
Recently, my boys went on their first field trip of the school year to a farm and they each came home with a pumpkin. Pumpkin isn't something I cook except for the time I made a Pumpkin Pie on Hasan's request. I asked the boys what they would like me to make first with their pumpkins. They immediately said cookies. I found this recipe on Joy of Baking. It is not like a traditional cookie. It's very soft, almost cake like. They were a big hit. Chocolate chips or walnuts would be a great addition to these cookies.
Low Fat Chocolate Chip Oatmeal Cookies
I'm always on the search for a low fat cookie recipe. My boys love cookies and it really is hard for them to stop at one. I came across this recipe on Skinnytaste. I liked that they were oatmeal cookies and I find that if I put chocolate chips in anything, the boys will gobble them up!

Chocolate Chip Cookie Bars
Cookies are one treat all kids jump for. I find cookies take so much more time to make then a cake because you have to keep putting batches into the oven. Also lately I've been having them end up flat. I love the idea of cookie bars where you spread the batter into a pan, bake and then cut them into squares. These cookies are a bit on the salty side so if you would like a sweeter cookie then reduce the salt. They also use oil instead of butter so no creaming butter and sugar which for me is a timesaver. The first time I made them we thought they were very tasty but a little greasy. So I reduced the oil. Less oil meant they required a little more effort to spread in the pan but we enjoyed more this way.
Healthy Cookies
Yes..you read that right....Healthy Cookies!!! But seriously these are no equivalent to a regular cookie but is a great substitute when you are craving something sweet but don't want to eat junk. These taste best when eaten right away. They are very versatile so you can change them up in so many different ways. Just be careful to add no more than 2 tbsp of add-ins otherwise they may fall apart. You could also try it with different nut butters to vary the flavour. How healthy or unhealthy they are really depends on what add-ins you choose to mix in. These are also a great way to use up any overripe bananas. I find the more ripe the bananas the better these cookies are.

My kids love cookies...if they have cake and cookies in front of them they almost always go for the cookies. I don't bake too many cookies because usually they have so much butter and usually I can't stop myself from munching on them all day. I saw this recipe on Mmm...is for Mommy and it only used 1/3 cup of butter so I pinned it.

This month I was assigned a fantastic blog, Healthy Delicious. I love the name of this blog because it is exactly what I try to do...make food that tastes great and is still healthy. Healthy Delicious is written by Lauren who has been cooking since she was only 10 years old (opposite of me who started when I was on the verge of getting married). I love her philosophy of eating great tasting food in smaller portions rather than large portions of food that doesn't taste so great...everything in moderation! Coconut Macaroons
I've never been a huge fan of coconut. I started making these one day after making some custard and having egg whites leftover. I didn't want to throw them out so I searched around and came across this recipe on AllRecipes.com. These are very easy to make, quick to put together and were very good. This time I had made these to giveaway to some family. Make sure you keep them in an airtight container otherwise they dry up and get hard. I had put them in some cellophane bags and they had hardened up. You can remedy this by popping it in the microwave for about 10 seconds. They are great snack for kids too. These would also be great dipped in some chocolate or with some drizzled on top.
