Tuna Kebobs
This is a recipe I got from my sister in law. Whenever she visits from Texas she makes amazing dinners for us and this is one of them. They were so yummy and didn't taste fishy at all. This makes a big batch. I will make the patties and freeze them individually layering plastic wrap in between. Once frozen I transfer them to some freezer bags so I always have some for a quick dinner.
Szechwan Fish
We love Hakka Chinese. Everyone I recommend it to ends up loving it too. Hakka Chinese is Indian Chinese Food. One dish that is on all the menus is Szechwan. Every restaurant I've had it at has a totally different recipe so I'm not exactly sure what is it that defines a dish as Szechwan. I suppose I could Google it but I'm just too lazy to do that. I came across this recipe at AllRecipes.com and made some changes and used fish instead of shrimp. This recipe is very quick to make.
Mummy's Indian Spiced Shrimp BBQ'd
My mom has been making this recipe for as long as I can remember. She fries the shrimp but I thought this would be great on the barbeque! It's very quick to make. We used a wok on the grill to make these. You can also put them on skewers. If you would like to fry them instead, in a non-stick skillet heat a couple of tablespoons of oil and fry with the addition of 2-3 whole green chillies.
Spicy Fish Tacos with Creamy Chilli and Cilantro Sauce
We really enjoyed the fish tacos I made a few weeks ago. Recently I saw another recipe on Cookin' Canuck that looked so good. I wanted to give this a try because it looked like it would be more spicy than my first try at fish tacos. As usual I increased the spices. These were very quick to make. The Creamy Green Chilli and Cilantro Sauce was really good. The recipe called for 2 oz of green chillies. In Canada they don't put ounces on our tins. I figured this would be half a tin. I added this and gave it a taste....wasn't spicy at all. I tasted the green chillies and they weren't hot so I added the whole tin and I was so glad I did! You can top these with whatever you like. We had lettuce, tomatoes, green onions and some Simple Guacamole. I also loved that the sauce used all low fat ingredients (which I would have done anyways).
Fish Tacos
I always feel lost on what to do with fish. I would love to make more but really don't have a lot of good recipes. Lately I've been seeing a lot of recipes for Fish Tacos. Most recently I saw them on Throwdown with Bobby Flay. They looked so yummy. Most recipes deep fry the fish which I want to avoid. The recipe I tried I found at Annie's Eats. The recipe was very simple and I had all the ingredients. I served this with the Guacamole and Pico de Gallo I made for the Spicy Bean Burritos. These were very easy to make and is something I will definitely be making again. I increased all the spices in the recipe.
Spicy Orange Garlic Shrimp
I have a problem...I make all these recipes with flavors that I am not used too and then when I taste it I'm expecting the traditional flavors I always have and am disappointed..until I get over it. Like when I made the Lemon Baked Pasta...I have always made tomato based sauces for my pasta. So when I bit into the Lemon Baked Pasta I was expecting tomato..I know...it doesn't make sense. Again when I made this shrimp dish I wasn't expecting the orange flavor even though I put the orange juice in. After I got over my sub-conscious expectations I really started to like this.
This recipe uses Old Bay Seasoning. This can be a little tough to find in Canada. I found mine at Longo's in the seafood section. This is a really quick dish to put together. My main change was to reduce the butter and replace it with oil.

Vietnamese Spring Rolls
When I was working for a consulting company my friend Julie and I would love to go out to eat. We would usually go out for Dim Sum but one time we went to a Vietnamese restaurant where I had these spring rolls for the first time.
These spring rolls are so light and refreshing. I hadn't had them since that first time and then when I got married my husband and I went to Ottawa for a weekend. We had dinner in a Vietnamese restaurant one night and ordered these spring rolls. My husband loved them. They are so simple and easy to make. With a few tips from Julie, I started to make them at home. I haven`t made these for awhile. A couple of weeks ago I found Brown Rice Vermicelli noodles at Longos and thought about those spring rolls I used to make. I love how the noodles are made from brown rice...add some fiber to the meal.

Chicken with Shrimp Sauce
Every time I make this dish I always think of my brother. I think he would really enjoy it....one day I'm going to make it for him. I have this file on my computer that's labeled "Red Lobster Recipes". I don't remember where I got it from but this recipe was in there. I've also seen it on numerous other websites so I don't know who the original author is. I've posted the link from AllRecipes.com which has the original recipe. My main changes were to increase the garlic and onion. I salt and peppered the chicken breasts. I also added salt and red chilli flakes to the sauce. I used lemon juice instead of lime juice and left out the rosemary, reduced the butter and added oil. I used frozen raw shrimp and much more than the recipe calls for. This dish is very simple to make. I've read some reviews where people thought that 1/2 cup of flour is way too much and didn't like the consistency. I like my sauce thick but I did end up added water to thin my sauce. The sauce has a slight sour taste which I liked.
Spicy Egg Noodles with Shrimp
I made these egg noodles and my son loved them. The next day he was complaining that I haven't made them for a long time. So I've been wanting to make them for awhile but I haven't been able to find broad egg noodles. I could only find extra broad which I think is too wide. So this week I found some and decided I would make these noodles. I make my own zeera dhania (cumin coriander) powder and keep it in my pantry. I used a 1.5 dhania : 1 zeera ratio. I dry roast the spices and then grind them up. This is turned out really spicy. I used 1/2 tsp cayenne pepper. Next time I would reduce it to 1/4 tsp. Less Shan Masala Seekh Kabob can also be added to reduce the spiciness. This Masala pack is not on the website but you should be able find it in your Indian grocery store.
Spicy Tuna Salad
This is my mom's tuna salad and it's the best tuna salad I've ever had. I find all the ones you get outside are just too bland.
Tuna Salad
Printer Friendly
1 tin of tuna, well drained (I like Clover Leaf Skip Jack Flaked Tuna in water)
2 tbsp mayonnaise
1 tbsp onion, minced
1 tbsp coriander, minced
1 green chilli, seeded and minced (if the chilli is really small I don't bother to seed it)
salt and freshly ground pepper to taste
Mix all above ingredients together.
Now make a sandwich!
