This is a recipe I adapted from one I found at AllRecipes.com. The original recipe is for blueberry muffins. I've used this recipe with blueberries and it turned out well but I think it could use a crumb topping or sprinkle of turbinado sugar on top. As chocolate chip muffins they were good as is. If you like them really chocolatey you could add more chocolate chips.
Chocolate Chip Muffins

2 cups minus 4 tbsp all-purpose flour
3/4 cup sugar
1/2 tsp salt
3 tsp baking powder
3/4 cup milk
1/3 cup canola oil
1 egg
1/2 cup milk chocolate chips (or 1 cup blueberries)
1 tsp vanilla powder
Heat oven to 400 F. Line 12 muffin cups with liners. In medium bowl, combine flour, sugar, baking powder, chocolate chips, vanilla powder and salt.
In a large bowl, combine milk, oil and egg. Blend well. Add dry ingredients all at once, stir until dry ingredients are moist (batter will be lumpy).
Fill cups 2/3 full. Bake for approximately 20 minutes (mine were done in 17 minutes).
Where did you buy the vanilla powder?
ReplyDeleteI had bought the vanilla powder from The Seafood Depot on Aviva Rd (same road as the Eddie Bauer Outlet). When I go I buy a whole bunch but now I'm out. I don't know how authentic this is. I'm gonna order the real vanilla powder online since I am low.
ReplyDeleteI read recently that you can find non alcoholic vanilla extract or powder in health food stores...I'm gonna check it out the next time I go to the mall.
