Simple Fresh Green Beans

I'm always looking for ways to add vegetables to dinner.  I found this really simple bean recipe at The Pioneer Woman.  With Indian cooking we have so many spices that it seems like it's not possible to make something taste good without a page long list of spices.  So it's so nice to find a recipe that tastes good and is so simple.  I used vegetable broth instead of chicken broth. 


Simple Fresh Green Beans
Slightly adapted from The Pioneer Woman

1 lb green beans
1 cup chopped onion
2 cloves garlic
1/2 cup chopped red pepper
2 tbsp olive oil
1/2 tsp sea salt
1 cup vegetable broth
Freshly ground black pepper

Snap the stem ends off the green beans or chop them off.

Heat the oil over medium heat.  Add the onions and garlic and cook for a minute.  Add the green beans and cook until bright green.

Add the vegetable broth, red pepper, salt and black pepper.  Bring to a boil.  Turn heat to low and partially cover with lid.  Cook for 20 to 30 minutes or until the liquid has evaporated and green beans have softened but are still tender crisp.
