I love pasta and I love it even more when it is so simple to make. I really enjoyed this dish but next time I will use a different pasta than fettuccine. It's not one of my favorites. When making this make sure you add the fresh basil because that is what really makes this dish. My main change to this recipe was to replace the heavy cream with sour cream. I always use low fat. I love this substitution for heavy cream in pasta.
Pasta with Tomato Cream Sauce
Adapted from The Pioneer Woman

2 tbsp olive oil
1/2 medium onion, finely diced
3
1 398 ml can
salt and freshly ground pepper to taste
pinch of sugar
1/2 cup sour cream
Parmesan (optional)
Fresh Basil, chopped
1 lb of Fettuccine or 4 cups of Rotini
Cook pasta according to package directions. Reserve 1/2 cup of the pasta water before draining.
Heat oil over medium heat. Add onions and garlic and fry until soft and translucent. Add tomato sauce, salt, pepper and sugar. Mix and cook over low heat for about 25-30 minutes stirring occasionally.
Remove from heat and stir in sour cream. Add Parmesan and check seasoning. Pour

ReplyDeleteThey loved it! No I didn't and I remember you specifically said to use it BUT! When I went food shopping (I actually went to two places)they didn't have it :( and that day I had an exam so I couldn't go looking for it more...anyway, I kept thinking about it as I was making it...where do you go grocery shopping?
ReplyDeleteYeah!!! That's great! I go to Longo's and Wal-Mart. They both carry fresh basil in small packets but I have a hard time finding ones that aren't going bad. This summer I'm growing some in the backyard. I love the smell of it!
