Quick and Easy Salsa


I have seen this recipe for Restaurant Style Salsa on a bunch of different blogs.  I've never given it a try because it calls for Rotel and you can't get Rotel in Canada.  One weekend my brother was heading to the  States with his family so I asked him to pick some up for me.  This salsa is extremely quick to make and tastes great.  I used it in some Spicy Bean Burritos.  I also made some Baked Garlic Pita Chips and we dipped them in the salsa.  If you can't get Rotel, substitute 1 14 oz can of tomatoes and 1 can of green chillies for the Rotel.  I haven't tried this but I've read online that it's a good substitution.  most recipes for this salsa that I saw makes a huge batch.  This recipe I got from Mountain Mama Cooks and it made a reasonable amount.

Quick and Easy Salsa
Adapted from Mountain Mama Cooks
Note: can substitute 1 14 oz can of tomatoes and 1 can of green chillies for Rotel

1 14 oz can diced tomatoes
1 10 oz can Rotel
1/2 small onion, chopped
1 clove garlic, minced or pressed
1/2 jalapeno (I left the seeds in mine)
1 tsp honey
1/2 tsp salt
1/4 tsp ground cumin
small handful of fresh coriander, roughly chopped
juice of one lime

Add all the ingredients to a food processor and pulse till desired consistency.  Taste and adjust seasonings as desired.  Store unused salsa in fridge.

  9. Salams Asiya! I made this for my son's birthday party a few months ago and it was absolutely delicious! I'm planning on making it again soon after Ramadan inshAllah with some pita chips. I'll make a blogpost on it iA and let you know how it went :)

      Btw, the first time I made it I kept everything the same, but the heat level was a tad high for my spice-hating husband, lol. So this time I just kept the jalepeno out and there was plenty of heat from the chilis in the Rotel. I also fried up some pita bread, and honestly I didn't even think about baking them (now I know why the scale hasn't been moving back even though I'm working out... whoops LOL!)
