Quick Tomato Pizza Sauce
I've been having a hard time finding just the right sauce for pizza. Recently I had my family over for dinner and I wanted to make pizza for the kids. I found this recipe in Cook's Illustrated. It used crushed tomatoes....personally I don't like crushed tomatoes. There is this taste in them that I really don't like. When I was grocery shopping I found a can of organic chunky crushed tomatoes with basil by Western Family (available at Longo's). This is the best canned crushed tomatoes I have found. The pizza sauce turned out really well and it is super quick to make as well! I used it on my Easy Thin Crust Pizza. Do you use crushed tomatoes? What is your favorite brand?
Quick Tomato Pizza Sauce
Adapted from Cook's Illustrated
1 tbsp olive oil
3 garlic cloves, minced
2 tbsp tomato paste
1 1/2 tsp dried oregano
1/4 tsp red pepper flakes
1 tin chunky crushed tomatoes with basil (28 oz)
salt, to taste
In pan, heat olive oil and garlic in a pan over medium heat. Once fragrant and sizzling (about 1 1/2 minutes), stir in tomato paste, oregano and red pepper flakes. Cook until the mixture starts to brown, stirring often, about 2 minutes. Add the crushed tomatoes and stir. Bring to a simmer and cook until sauce is thick, about 10 minutes. Take off heat and stir in salt to taste.

this sauce looks wonderful cook's illustrated is one of my favourite books :) I use crushed tomatoes occasionally

ReplyDeleteHaving tasted this....all I have to say is "AWESOME SAUCE" (as quoted by Batmite!!!!) :) I stopped using canned tomatoes for the same reason!!!
ReplyDeleteThanks Nasham! I don't have as big an issue with the diced or whole tomatoes...it's the crushed that I'm not fond of until I found this brand.
