Chocolate Granola {SRC}



It's Secret Recipe Club time again!  This month I was assigned Table For Seven.  Table For Seven is written by Erin who is a "mom to many"!  Erin has 6 children.  Her youngest passed away last summer at the age of 31 days....this story brought me to tears.  I cannot even imagine what it is like to lose a child.  My father passed away in February which was and is difficult to deal with.  I cannot even imagine the pain of losing a child.  May God help you with this great loss Erin.

Erin lives in the suburbs of Midwestern Illinois.  We used to visit Illinois every year, specifically the suburbs of Chicago, to visit relatives.  My US geography is terrible...no idea if that is MidWestern Illinois...but I am Canadian so I think it's okay :)  Erin has some beautiful pictures of the meals she creates for her family.  Some of the recipes that I had bookmarked are Homemade Marshmallow Fluff, Chocolate Eclair Cake and Cheddar Bay Biscuits.  But I settled on making Chocolate Granola because I was all out of granola and chocolate anything sounds like a winner to me!  This granola was great.  It was not as sweet as the usual granola I make.  I would suggest using a good quality chocolate in this...something you love to eat.  I used semi sweet mini chocolate chips and wished I had used something sweeter.  I used a lot less chocolate than Erin and added in more nuts.  My eldest son who refuses to eat granola really enjoyed this (mainly due to the presence of chocolate).  It made a great breakfast with some milk!  Thank you Erin for sharing this recipe!

A side note:  The wooden bowl I used in the picture above was made by me in Grade 7 or 8 in my woodworking class...and for my Hyderabadi readers...the spoons in the picture above have a picture of the Charminar on them!

Chocolate Granola
Adapted from Table for Seven

3 cups large flaked oats
2 tbsp sugar
1/4 cup walnuts, chopped
1/4 cup almonds, chopped
1/4 cup ground flax seeds
2 tbsp canola oil
6 tbsp honey
1 cup good quality mini chocolate chips or any other chocolate chopped (I used 1/4 cup)

Preheat oven to 300 F.  Line a baking sheet with parchment paper.

In a  large bowl, mix together oats, sugar, walnuts, almonds and flax seeds.

In a small saucepan warm the honey and oil until the honey has thinned.  Pour this over the oat mixture and stir until everything is coated.  Transfer to prepared baking sheet.

Bake for 10-15 minutes.  Stir.  Bake for another 10-15 minutes or until everything is golden brown.  Allow to cool and then stir in chocolate.

  5. I LOVE this picture Asiya! Love the bowl, love the spoons, and absolutely LOVE the granola! I have been wanting to make homemade granola, but I guess I've been nervous because I don't know too much about oats. I'm going to make a trip down to my grocery store either tonight or tomorrow, and I'm definately going to look for flaked oats. It's such a tasty and healhy way to get in additional nutrients!

    1. Thanks Henna! The wooden spoon bowl I made back in Grade 7 or 8. My parents were using it as a fruit bowl at their place. Everything else I took from my mom. I found a lot of old things of my mom's while we were cleaning out my parents place back in March.

      Large flaked oats are rolled oats.....I used to avoid making granola before b/c I could never find rolled oats until I figured out that here they are called large flaked oats. Our favorite granola so far is the Omega 3 granola I posted awhile ago.

    2. oooooh alright! I'm so glad you replied so quick, lol. I just got back from the grocery store and I couldn't find anything called flaked oats LOL!
      I'm so excited :) I had the green monster smoothie for breakfast... It was soooooo gooood mashAllah! Finally a spinach based smoothie that I can call "the" one!

    3. I think I should have written Old Fashioned Rolled Oats...don't know if that is same as rolled oats or not....let me know how your granola experiment turns out (good or bad)...

    4. Btw, I made this last night before going to sleep and added the chocolate this morning... Needless to say, it is divine! The only things that I changed were that I doubled the almonds because I need my walnuts to make baklava later this week, I used quinoa in place of flax seeds because I didn't have any, and I used 1/2 cup chocolate chips. Oh, and I used old fashioned oats :)
      Btw, I've made a blog post on the green monster and you have a shoutout in it :) inshAllah it should go live by Thursday.
      I'm going to take pictures of the granola today inshAllah :) ahhh so excitedddd :D

    5. Woohoo!!!!! I'm so glad it turned out great! Did you cook the quinoa and then add it?

      Look forward to reading the post on Thursday! :) Oh..and baklava sounds amazing! I have yet to attempt to make that...seems like a lot of work....

    6. I took some to a friend's house last night and they loved it! :)
      As for the quinoa, I didn't cook it; I had read that quinoa is great in granola, so I just added it raw along with the rest of the ingredients... It added a nice crunch and amazing nutritional value :)
      I'm excited to try the Baklava! My son's birthday is coming up and we're having two separate parties because we can't fit everyone into our apartment at once LOL.
      So yeah, I'm going to make a two trays of baklava so that it'll come in handy for both parties :) They keep well for long amounts of time, so I can make it well in advance before the parties :)

    7. Awesome! I never knew you could eat quinoa raw!!! Will have to give that a try. I've been trying to get on the quinoa bandwagon but haven't found a recipe that I'm crazy about. Usually I'll just make it into some kind of patty/kebob. It never turns out amazing and my husband eventually asked me why I keep making it :)

      Hope the parties go well...sure the baklava will turn out great!
