Strawberry White Chocolate Sprinkle Ice Cream Sandwiches {CLBN}


With the weather finally warming up we are spending more time outside.  With warmer weather also comes enjoying more frozen treats!  Today on the blog I am re-creating Canadian Living's Strawberry White Chocolate Sprinkle Ice Cream Sandwiches.  I will be showing you step-by-step how I prepared these Ice Cream Sandwiches.  I was nervous when I got my assignment since I don't do step-by-step pictures in my regular posts because it's difficult to take a lot of pictures before Bilal gets curious and starts to poke around.  But he was very well behaved for this post!  So please read on to see how I prepared these Strawberry White Chocolate Sprinkle Ice Cream Sandwiches.

These Ice Cream Sandwiches involve baking a chocolate cookie from scratch.  The cookies are slightly underbaked to help them stay chewy.  Usually when I bake cookies I tend to underbake because I prefer chewy cookies to crunchy cookies.  To make the cookies, I gathered all the ingredients.  You will need all-purpose flour, cocoa powder, eggs, granulated sugar, brown sugar, vanilla, butter, baking soda and salt.  Ingredients I always have on hand!


Using my mixer fitted with the paddle attachment, I added the butter and sugars and beat until the mixture was fluffy.


Next the eggs were added one at a time, beating until combined.  Finally the vanilla was added and mixed until combined.  In a separate bowl I whisked together the flour, sifted cocoa powder, baking soda and salt.


This was added to the mixer and stirred until combined.


On a rimless parchment lined cookie sheet I dropped the batter by heaped tablespoon and baked in a preheated oven.


They bake for about 11 minutes.  The cookies rested for 10 minutes and then I transferred them to a cooling rack until completely cooled.  You can get the full detailed recipe to make these cookies here.  I made the cookies a day in advance.  The cookies on their own were a huge hit with my boys!


Now it was time to assemble the Ice Cream Sandwiches!  To assemble the Ice Cream Sandwiches you need the cookies I baked above, strawberry ice cream, sprinkles and white chocolate chips.  Make sure to use good quality ice cream for the best results.


I combined the sprinkles and white chocolate chips in a dish.  I topped one cookie with 1/3 cup of ice cream and then pressed down on top with a second cookie.


Using an offset spatula, I smoothed out the edges.  Next you are to sprinkle the edges of the sandwich with the sprinkles/white chocolate chip mixture.  I wanted Bilal to be involved so I had him roll the Ice Cream Sandwich in the sprinkles and white chocolate chips.  He was so excited to be a part of the process.  Whenever I spoke about making the Ice Cream Sandwiches he would be sure to remind everyone that he was going to help.  I absolutely adore his tiny hand in the picture :).  He took his time and was distracted by eating all the sprinkles that fell on the cutting board so you can see our ice cream had started to melt.  I then sprinkled the sprinkles/white chocolate chip mixture on the spots that were empty.


I started off with a bowl that was too big and the sprinkles/white chocolate was not adhering well so I used a smaller bowl and that solved the problem.


The sandwiches are wrapped in plastic wrap and put in the freezer for the ice cream to harden.  Before eating, let them sit at room temperature for 5 minutes.


This recipe makes 6 Ice Cream Sandwiches.  The chocolate cookie recipe makes 24 cookies so you will have some leftover to enjoy on their own or you could just make more Ice Cream Sandwiches!

We really enjoyed these Ice Cream Sandwiches.  Both boys thought they were delicious.
