Whole Wheat Oatmeal Banana Applesauce Bread
Adapted from Ambitious Kitchen
2 bananas, mashed
1/3 cup applesauce
1/3 cup honey
3/4 cup milk
1 egg
1 tsp vanilla extract
1 1/2 cups whole wheat pastry flour
1 cup large flake/rolled oats
1 1/2 tsp baking powder
3/4 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
Preheat oven to 350 F. Grease a loaf pan. I used a cooking spray.
In a medium bowl, mix together mashed bananas, applesauce, honey, milk, egg and vanilla extract.
In a large bowl, whisk together flour, oats, baking powder, baking soda, salt and cinnamon. Add the wet ingredients and mix until just combined. You can sprinkle some oats on top if you like.
Pour into prepared pan and bake for 55-60 minutes or until a toothpick inserted comes out clean with a few crumbs on it.

ReplyDeleteI've baked a few banana breads while here in California, and my mom absolutely loves them. I love that you've used whole wheat flour and apple sauce in this. I've been trying to think of ways to healthify my current recipe, and honestly the only thing I've changed is use oil instead of butter, lol. There's a store here that sells Red Bob Mill's products for super cheap so I'll grab a bag of whole wheat pastry flour before leaving iA :)
ReplyDeleteWe love banana bread too...but I think it's b/c they always taste like cake :) This is going to be very different. A lot less sweet and more bread like than cake. Let me know how it turns out!
