Simple Cumin Roasted Cauliflower

I love recipes that are so simple and turn out so good.  I saw this recipe on Smitten Kitchen recently.  The original had yogurt and pomegranate seeds.  I left those out to keep it simple.  I actually used to make cauliflower like this but cannot remember why I stopped.  When Hasan came home from school he asked to try some and he loved it...he had some more with his dinner too!


  
Simple Cumin Roasted Cauliflower
Adapted from Smitten Kitchen

1 head of cauliflower, cut into florets
2 tbsp olive oil, divided
1 tsp cumin seeds
1/2 tsp salt
1/2 tsp freshly ground black pepper
cilantro, minced for garnish

Preheat oven to 425 F.  Line a baking sheet with foil and brush with 1 tbsp of olive oil.

In a bowl add the chopped cauliflower, 1 tbsp olive oil, cumin seeds, salt and black pepper.  Mix well and spread on prepared baking sheet.  Roast for 20 to 30 minutes or until tender.  Sprinkle with cilantro and serve hot!

  6. That sounds good, but I recently discovered that I don't like cauliflower... but I could use potatoes instead right? They have about the same mashy consistency.
