Simple Cumin Roasted Cauliflower
Adapted from Smitten Kitchen
1 head of cauliflower, cut into florets
2 tbsp olive oil, divided
1 tsp cumin seeds
1/2 tsp salt
1/2 tsp freshly ground black pepper
cilantro, minced for garnish
Preheat oven to 425 F. Line a baking sheet with foil and brush with 1 tbsp of olive oil.
In a bowl add the chopped cauliflower, 1 tbsp olive oil, cumin seeds, salt and black pepper. Mix well and spread on prepared baking sheet. Roast for 20 to 30 minutes or until tender. Sprinkle with cilantro and serve hot!

ReplyDeleteThat sounds good, but I recently discovered that I don't like cauliflower... but I could use potatoes instead right? They have about the same mashy consistency.
