Next time I will cut the avocado into pieces. I mashed it with a fork and it felt lost in the dip. I'm also going to try to use 2 avocados next time. If it goes well I will update this post with my changes. Also the cumin gives it a slight brown tint so make sure you garnish to make it all pretty! After making this dip I thought "What are we going to eat this with???". I decided to make some Baked Garlic Pita Chips (recipe coming soon). They turned out really well and were perfect for this dip. The kids also loved the chips as a snack. Hasan kept asking if he could have more.
Adapted from My Baking Addiction
1 avocado, mashed
3/4 cup low fat sour cream (for a thicker dip use less)
1/2 tsp ground cumin
1/4 tsp Sriracha
1/4 + 1/8 cup salsa
1/4 cup shredded cheddar cheese
1/4 cup diced tomatoes (seeded)
salt and freshly ground black pepper to taste
additional cilantro, green onions, tomatoes and cheddar cheese for garnish
In a small bowl, mix together sour cream, cumin and Sriracha.
In a large bowl, mash avocado. Add sour cream mixture and salsa and fold in. Add tomatoes, cheese, salt and black pepper and mix well. Refrigerate for 1 hour and garnish. Serve with some baked pita chips!
