Cauliflower Fritters {Guest Post}


I hope everyone's Ramadan is going well!  We are in the final stretch and it feels like it just started.  It always goes too quickly.

Braised Cauliflower with Garlic and Tomatoes

We love cauliflower in our home...even the kids.  This recipe is very simple to make.  Lately I had just been making Simple Cumin Roasted Cauliflower but change is always good.  This recipe uses basil but I think you can substitute any herb.  Next time I'm going to try some fresh coriander since that is what I always have in the fridge.


Simple Cumin Roasted Cauliflower

I love recipes that are so simple and turn out so good.  I saw this recipe on Smitten Kitchen recently.  The original had yogurt and pomegranate seeds.  I left those out to keep it simple.  I actually used to make cauliflower like this but cannot remember why I stopped.  When Hasan came home from school he asked to try some and he loved it...he had some more with his dinner too!


Aloo Gobi (Potato and Cauliflower Curry)

For a long time I've been looking for a good Aloo Gobi recipe.  My husband had gotten me the Best Ever Indian Cookbook a few years ago.  It really isn't a very good cookbook.  The pictures are really good but pictures can be deceiving.  All the recipes I've made turned out average at least until this one.  This is the best Aloo Gobi I've made to date.  When I saw this recipe I didn't have high hopes because of my past tries with recipes from this cookbook and this recipe didn't have any of the typical ingredients you find in all Indian recipes....onions, tomatoes, ginger, garlic....but it actually turned out pretty good.  I love how there are no onions to chop and fry.  It makes this a quick dish to cook.  I didn't change any of the ingredients.  Just some slight modifications to the method.
