| Cake Flour, 1 cup | 1 cup minus 2 tbsp all-purpose flour or 1 cup minus 2 tbsp all-purpose + 2 tbsp cornstarch, sifted several times (6 should be enough) |

| Chinese Black Vinegar | Balsamic Vinegar |
| Chinese Cooking Wine, 3 tbsp | 2 tbsp orange juice + 1 tbsp rice vinegar |
| Chinese Rice Wine, 2 tsp | 1 tsp apple cider vinegar + 1 tsp water |
Chipotle Chillies in Adobo Sauce Quantity: 3 | 1/2 tsp liquid smoke + 2 minced jalapenos + 3 tbsp ketchup (have not tried this yet) |
