Orange Streusel Coffee Cake
2 cups sifted all-purpose flour
1/2 cup sugar
2 1/2 tsp baking powder
1/2 tsp salt
juice of one large orange (or 1/2 cup orange juice if not using fresh)
zest of one orange (reserve 1 tbsp for topping, use remaining in cake)
1 egg, lightly beaten
1/2 cup milk
1/3 cup canola oil
Streusel Topping
1/4 cup flour
1/4 cup sugar
1 tbsp orange zest
2 tbsp margarine
Preheat oven to 350 F. Grease an 8 inch round pan and line with parchment paper.
Sift together flour, sugar, baking powder and salt. Mix in orange zest.
Make a well in the center. Add egg, milk, orange juice and oil. Mix until just combined. The batter will be lumpy. Pour into prepared pan.
In a small bowl add streusel toppings and mix together until crumbly. Sprinkle on top of cake and bake for about 30 minutes or until a toothpick inserted in the middle comes out clean. Put under the broiler if you want a crispier topping but keep a close eye on it so you don't burn it. Enjoy with a cup of tea!
