German Pancakes {SRC}
It's Secret Recipe Club time again! For those that are not familiar with the club, each month you are assigned a blog and you must make one recipe from it....but you must keep it a secret. Then on Reveal Day you post the recipe you made. This month I was assigned Loving Life written by Kirstin. I loved how this blog was organized. Everything was very easy to find. After browsing through all the recipes the one that stuck with me was German Pancakes. I've never had one or even heard of it. It was very neat how it rose during the baking. When making this I was very tempted to add some baking powder but I thought I should just stick to the recipe. And I was so glad I did. It turned out great! It is like a thick crepe. Similar to the Baked Oatmeal with Blueberries and Bananas I recently posted, it takes some time to bake. This is a recipe I would definitely make for dessert. I sprinkled on some icing sugar and drizzled on some maple syrup. Some fresh fruit would go great with this...I didn't have it with the strawberries in the picture because they were sour :(. I made half of the original recipe since the kids already had their breakfast when I was making this. You can easily double it but use a 9x13 baking dish.
German Pancakes
Adapted from Loving Life
Note: This tastes best straight out of the oven. Reheated leftovers taste eggy
3 eggs
1/2 cup milk
1/2 cup flour
1 tbsp sugar
1 tbsp unsalted butter
pinch of salt
Preheat oven to 400 F. In an 8x8 baking dish, add butter. Stick the pan in the oven while it preheats to melt the butter. Once melted remove from the oven. Meanwhile, in a bowl whisk together the remaining ingredients. Pour into the prepared pan and bake for approximately 30 minutes. Serve hot with icing sugar, maple syrup and fruit!
Note: This recipe is easily doubled. Use a 9x13 baking pan instead.
