Strawberry Sour Cream Ice Cream (Eggless)
Summer is over...school started last week. It seems like it was just yesterday when school ended. The summer just flew by especially with Ramadan right in the middle. This summer I've been experimenting with making ice cream. Mostly with trying to make a good low fat ice cream. It is still a work in progress. Amidst all that I made this Strawberry Sour Cream Ice Cream. It's not low fat but what I loved about it was there was no custard to make. It is extremely simple to make. Everything is done in the food processor, then chilled and next you process it in your ice cream maker. The outcome of this ice cream really depends on your strawberries. If you have some super sweet strawberries this ice cream won't be overly sour. Unfortunately my strawberries were sour and I didn't check before I made it. So my ice cream was a little sour but we all enjoyed it regardless.
Strawberry Sour Cream Ice Cream (Eggless)
Adapted from Annie's Eats
1 pound fresh strawberries, sliced
3/4 cups sugar
1 cup sour cream
1 cup whipping cream
Mix the strawberries and sugar in a bowl until the sugar is dissolved. Allow to sit for an hour, stirring occasionally.
Transfer the strawberries to a food processor. Add the sour cream and whipping cream. Pulse until everything is combined and slightly chunky. Chill in the fridge for 1 hour and the proceed according to your ice cream makers directions.

I had a whole pack of fresh strawberries stuffed in a container, in my freezer. But sadly, all thanks to untimely, all-the-freaking-time load-shedding, all got spoiled. :S
