Low Fat Strawberry Yogurt Scones


This week I'm sharing another recipe for scones.  Early in July, we had gone Strawberry Picking at Organics Family Farm.  We haven't gone for the last couple of years because their strawberry picking season was during Ramadan.  We were very excited to be able to go this year.  We brought home a lot of strawberries and I used some of them to make these Strawberry Scones.  One of our favourite things about Organics Family Farm is the wood fired pizza they serve at lunch time.

Strawberry Banana Oatmeal Cups


Ramadan Mubarak!  We began fasting this past Saturday which means a month of fasting and ibadah (worship).  Today I'm sharing a recipe for Strawberry Banana Oatmeal Cups which would be great for suhoor (the pre dawn breakfast).  For Suhoor, we don't like to have something very heavy.  Usually we have cereal, eggs or oatmeal.  

I like to make suhoor ahead of time, so all I have to do is warm it up in the morning.  These oatmeal cups can be made before and kept in the fridge.  When you want to have them, all you have to do is warm them up in the microwave.  I've adapted this recipe from my Baked Maple Walnut Banana Oatmeal Cups.  This recipe is very versatile so you can experiment with different fruits and nuts.

Strawberry Trifle


Trifle is a great dessert to make to feed a crowd and it's so easy to make.  Growing up trifle always had Jello, cake, custard and fruit in alternating layers.  To make this even easier, I used Instant Pudding instead of making a custard from scratch.  You can buy pound cake but I chose to make my own cake and used this recipe without the pistachios.  I baked it in a 9x13 pan.  I had some cake leftover after assembling the trifle.

It is Secret Recipe Club time once again and this month I was assigned Fearless Homemaker.  I've been following Amy's blog for awhile now and absolutely love her photography.  Amy is a homemaker.  She not only shares her recipe, but also shares crafts and entertaining tips.  I love the story of how she and her husband planned a surprise wedding.

Strawberry Jam {CLBN}


One of the things I love about the weather warming up is the grocery stores being stocked with fresh berries.  Strawberries available in the winter are always lacking in flavour.  Warmer weather always brings sweeter strawberries!  Today I am re-creating Canadian Living's Strawberry Jam in my kitchen.  Their version is infused with vanilla.  I've never made jam before or done canning so I was a little nervous about this assignment.

Layered Strawberry Rhubarb Trifle {CLBN}


Today I am recreating Canadian Living's April cover recipe in my kitchen.  When I got my assignment I was excited but also nervous since I've never made or even eaten rhubarb before. I have seen lots of recipes that pair strawberries and rhubarb but I would always leave the rhubarb out scared it would make the whole dish sour.  As I looked over the ingredient list I loved the combination of an Orange Vanilla Bean Custard combined with strawberries.

Strawberry Lemonade {SRC}


It's time again for The Secret Recipe Club.  This month I was assigned Fran's Favs.  Fran is an Italian Foodie and a very experienced cook.  I loved going through her recipes and first was stuck on her Twinkie Clone recipe.  It was the first recipe I saw and it immediately made me think of Baba (my father).  

Strawberry Popsicles



Recently I found a great organic strawberry farm near our place.  My mom tagged along with us and we all had a lot of fun.  We came home with a 7 litre basket full of strawberries and now the big task of what to do with all of the strawberries.  Unfortunately the strawberries weren't very sweet but they were very juicy.  I gave a shot at a strawberry donut recipe but that was a major fail.  Next up was strawberry popsicles!  I've been wanting to make popsicles at home for awhile now.  These were so simple to make and were really good.  You should adjust the amount of sugar to how sweet your strawberries are.  I always get weary of adding lemon juice to recipes that I want sweet to I significantly reduced the amount.  These were a great treat and I hope you give them a try!

Strawberry Sour Cream Ice Cream (Eggless)


Summer is over...school started last week.  It seems like it was just yesterday when school ended.  The summer just flew by especially with Ramadan right in the middle.  This summer I've been experimenting with making ice cream.  Mostly with trying to make a good low fat ice cream.  It is still a work in progress.  Amidst all that I made this Strawberry Sour Cream Ice Cream.  It's not low fat but what I loved about it was there was no custard to make.  It is extremely simple to make.  Everything is done in the food processor, then chilled and next you process it in your ice cream maker.  The outcome of this ice cream really depends on your strawberries.  If you have some super sweet strawberries this ice cream won't be overly sour.  Unfortunately my strawberries were sour and I didn't check before I made it.  So my ice cream was a little sour but we all enjoyed it regardless.

Green Monster {SRC}


It's the last Monday of the month which means it time for The Secret Recipe Club!  This month I was assigned Life on Food written by Emily.  Emily is a young foodie who has lived in several different cities across the US (unlike me who has lived all my life in Toronto...I now live in the suburbs which I don't think really counts as another city....it is still GTA).  Emily has some great recipes on her blog like this Grilled Chicken Marinade or this Shrimp Thai Noodles with Spicy Peanut Sauce.

Strawberry Cake

Now that warm weather is here the grocery store has lots of sweet strawberries.  I had bought 2 packets from Longo's....then I went to my mom's and she had bought a packet for Hasan...so now my house is overflowing with strawberries.  I hate it when food goes bad so I knew I had to do something with them or else I was going to end up with some rotting strawberries.  I found a recipe at Smitten Kitchen which was perfect because it used strawberries, had no vanilla (I am all out of vanilla powder) and it used 4 egg whites (I had exactly 4 egg whites sitting in my fridge).  I replaced the butter with margarine and made a low fat cream cheese frosting.  I made half the recipe because the whole recipe was way too much for our family.  I didn't have cake flour so I just used all-purpose but reduced the amount.  I should have sifted it but I was lazy.  Next time I would do a proper substitution to make the cake less dense.  I omitted the food colouring.  The original recipe uses frozen strawberries which would be a great idea when strawberries aren't in season.  This was so yummy...I am really looking forward to making it again!
