Chocolate Truffle Energy Bites



Recently I shared with you my review of Natural Delights Medjool Dates.  We love dates and these were the best ones we have ever had.  With the Natural Delights Medjool Dates I made these amazing Chocolate Truffle Energy Bites.  Earlier in May I had posted a recipe for Peanut Butter, Oatmeal and Chocolate Chip Energy Bites and since then I have been searching for a recipe that didn't use any peanut butter.  I found this recipe on Sally's Baking Addiction which looked like it would be good to try.  I made a few changes to adjust for what ingredients I had on hand.  These turned out great and tasted best chilled.  I told Hasan they were chocolate to get him to try them and he loved them!  He even asked for some the next day.  I made half the recipe but next time will be making the whole recipe since they didn't last very long!

Chocolate Truffle Energy Bites
Adapted from Sally's Baking Addiction

Makes 16-18 bites

14 pitted Natural Delights Medjool Dates
2 tsp vanilla powder
1/4 cup cocoa powder
1/2 cup almonds
1/2 cup walnuts
1/4 tsp salt
Optional toppings: icing sugar, cocoa powder, coconut, chopped nuts

Add nuts to food processor and process until ground.  Since I made half this recipe I had to use my nut grinder to get the nuts ground.  Rinse the dates under very cold water.  Add to the food processor along with the ground nuts, vanilla powder, cocoa powder and salt.  Process until a ball is formed.  Transfer to a bowl. Cover and chill in the refrigerator for 30 minutes.  Roll into small balls and then roll in desired toppings.  Keep in an air tight container in the refrigerator.

  4. omggg these look sooooo good! I have a ton of dates in my refrigerator leftover from Ramadan when we had to leave for my mom's surgery... It was one of those like 10 pound boxes, and I still have half a box to finish. This would be such a good way to put a dent in it lol!
    Plus, I could sneak these to Zuni and tell him it's chocolate (technically I wouldn't be lying...LOL!).
    Btw, inshAllah Zuni and I are flying out to Cali tomorrow, and Owais will be flying out in a week... these are the first thing I make (other than regular dinner) as soon as I get back iA! :)

I didn't tell Hasan they were made with dates..I said they were chocolate :) And he's asking me to make them again....If the dates you have aren't Medjool check out the review post b/c I post a bunch of tips from Natural Delights and one of them tells how much of a cup 5 or 6 Medjool Dates are.

    3. You are the BEST!!! Thank you! I'm pretty sure that we wouldn't have them b/c we have the Canadian version of Target. I haven't had a chance to really look around Target yet. There isn't one close by and with the kids I really just can't concentrate on shopping.
