Homemade bread is one of my favourite things but there is a lot of waiting involved when making bread at home that it isn't always feasible to do. This recipe for Quick Cottage Cheese Rolls doesn't involve any yeast so it is super quick to make. They are made with a surprising ingredient, cottage cheese!
I've made Cottage Cheese Bread before so I thought these rolls would be just as good! For these dinner rolls, I used Gay Lea Nordica Cottage Cheese. I always have a tub of cottage cheese in my fridge to have as a snack after a workout. I love that it is full of protein and delicious too! Gay Lea Nordica Cottage Cheese is gluten and nut free as well as Kosher certified. It is available in Fat Free, 1%, 2%, 4% and Lactose-Free.
I divided the original recipe in half and made 8 rolls out of the recipe. I also added some salt to help bring out the flavours. These rolls come together very quickly and are made in the food processor. The dough is very sticky so make sure to flour your board well before transferring the dough to it. I rolled my dough into a ball, they didn't bake that way and come out in all sorts of different shapes giving it a more rustic look. Although these rolls do not have any yeast in them, there are soft and light. They were delicious with some butter. If you want a sweeter roll, you can increase the sugar. Leftover rolls can be stored in an airtight container but the sugar will dissolve into the roll so you won't get the crunch from the sugar but they are still tasty! I can see a lot of variations of these rolls. Mixing in some cheddar cheese or adding in some herbs would be some great options!

Quick Cottage Cheese Rolls

Makes 8 rolls
3/4 cup Gay Lea Nordica Cottage Cheese
2 eggs
3/4 tsp vanilla extract
1/4 cup sugar
1/2 tsp baking soda
3/4 tsp white vinegar
2 cups all-purpose flour
1/4 tsp salt
3/4 tsp baking powder
For brushing on top:
2 tbsp milk
2 tbsp sugar
Preheat oven to 350°F. Line a baking sheet with parchment paper. I used a Silpat mat.
To a food processor, add cottage cheese, eggs, vanilla extract and sugar and process.
In a small bowl, mix together the baking soda and vinegar. Add to the food processor.
Add the flour, salt and baking powder. Process until everything is combined. The dough with be wet and very sticky.
Transfer the dough to a well floured board. Divide into 8 pieces and roll each into a ball. Place on the prepared baking sheet. Bake for 12 minutes. Remove from oven and brush each roll with milk. Then sprinkle sugar on top. Bake for an additional 5-10 minutes or until browned. Leftovers should be stored in an airtight container.

These sound delightful and I love that they are all sorts of shapes and sizes. They look so puffy and tempting, I'm a sucker for bread and can prolly eat all of them.
