One Bowl Banana Bread


Whenever bananas have gone past their edible stage, the best thing to do is to make banana bread!  I have a recipe for Banana Bread currently on my blog but it makes two loaves and has a lot of sugar and oil.  It is delicious but I wanted something that would make a smaller quantity and had less sugar and oil.   This One Bowl Banana Bread recipe I am sharing with you today is our new favourite banana bread.  I've also mixed in some white whole wheat flour to make it "healthier"!  My boys loved to toast a slice and then slather on the butter which probably defeats the idea of making the banana bread healthy....




One Bowl Banana Bread

Adapted from Simply Recipes

2-3 very ripe bananas, peeled (I suggest using 3, it makes a big difference in taste and texture)
1/4 cup canola oil
1 tsp baking soda
pinch of salt
1/2 cup sugar (you could add up to 3/4 cup if you would like it more sweet)
1 egg, beaten
1 tsp vanilla extract
1 cup all-purpose flour
1/2 cup white whole wheat flour
raw sugar for sprinkling on top

Preheat oven to 350 F.  Spray a loaf pan with cooking spray.

In a large bowl, mash the bananas.  

Stir in oil.

Add baking soda and salt. Mix.

Add sugar, egg and vanilla.  Mix.

Add flours and mix until just combined.

Pour batter into prepared pan. Sprinkle raw sugar on top of loaf.

Bake 50-60 minutes or until a toothpick inserted in the center comes out clean.

Let cool a few minutes and then transfer out onto a cooling rack.

  2. The best recipe I’ve used so far and I’ve used at least 10 different recipes. Moist, not too sweet, soft. Perfection! I make them in muffin tins out and you want to cook them for only 15 minutes that way.
