Low Fat Strawberry Yogurt Scones


This week I'm sharing another recipe for scones.  Early in July, we had gone Strawberry Picking at Organics Family Farm.  We haven't gone for the last couple of years because their strawberry picking season was during Ramadan.  We were very excited to be able to go this year.  We brought home a lot of strawberries and I used some of them to make these Strawberry Scones.  One of our favourite things about Organics Family Farm is the wood fired pizza they serve at lunch time.

Typically scones have a lot of butter.  For these scones, I have used oil and not a lot of it.  These are very simple to make.  I love to switch up the fruit in these scones to make different varieties.

Low Fat Strawberry Scones

Adapted from Annie's Eats

1 1/2 cups all-purpose flour
2/3 cup white whole wheat flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2/3 cup vanilla yogurt
3 tbsp canola oil
1 egg, lightly beaten
3/4 cup chopped strawberries
raw sugar for sprinkling

Preheat oven to 400 F.

Line a baking sheet with parchment paper.

In a large bowl, whisk together flours, sugar, baking powder, baking soda and salt.

In a small bowl, whisk together yogurt, oil and egg.  Stir in strawberries.

Add wet ingredients to dry and mix until mostly combined.  Knead in the bowl with your hand.  If needed, add a tsp or more of milk to bring dough together.  Be careful not to over mix.

Using an ice cream scoop, drop dough onto to prepared baking sheet.

Sprinkle with raw sugar.

Bake for about 20 minutes or until lightly browned.
