Crispy Spiralized Sweet Potato



Lately I've been trying to add more Sweet Potatoes to our diet.  I've always had a tough time with making Sweet Potato Fries as I can never get them crisp.  Recently, I tried spiralizing them and baking and they turned out great!  The kids ate them up with no complaints.  They are simply seasoned with extra-virgin olive oil and salt.

Originally I had a hand held spiralizer and it was difficult to use.  I bought the spiralizer attachment for my mixer and it has made spiralizing much easier.  After you have spiralized your sweet potato, you are left with a core.  I slice this up and mix in with my potatoes.  I also don't peel my potato.

We love potatoes and I've been trying to switch things up and have more sweet potatoes.  They are much more nutritious than the regular Yukon Gold potatoes we usually have.  The recipe I'm sharing today has very simple ingredients.  I love how the tops gets crispy.  I use the food processor to get thin evenly sliced potato slices.  You can also sprinkle some additional spices on top like cayenne pepper or chilli powder.

Today is the Reveal Day for The Secret Recipe Club which also means I've discovered another great recipe!  This month I was assigned Hapatite written by Nicole.  The name of Nicole's blog is a combination of the words hapa and appetite.  Hapa is slang for a person of mixed racial heritage, including roots in Asian/Pacific Island ancestry.  Nicole lives in DC and is ethnically Chinese, Cherokee, German and American but culturally Hawai'ian.  This is reflected in the diversity of recipes on her blog.  Not only does she have recipes, but she shares reviews of restaurants and tea!

Spiced Sweet Potato Fries

Lately we've been really liking sweet potato fries.  Whenever we get Hero Burgers we now always get sweet potato fries.  They are a great change and much healthier than regular potatoes.  My husband had done some grocery store and picked up some sweet potatoes.  I needed to do something with them and started searching my favorite blogs for sweet potato recipes.  I was finding a lot of sweet potato pie recipes.  As I was searching Smitten Kitchen I came across this recipe.  I was hesitant because of the odd mix of spices...coriander, fennel and oregano???  But Smitten Kitchen has never failed me so I gave it a try and we loved it!
